This is one of our favorite meals for winter: yummy roasted squash stuffed with braised greens and loads of veggies. The best part? There are always plenty of leftovers for lunch the next day!

What You’ll Need:

  • 2 large delicata squash
  • 3 tsp extra virgin olive oil
  • salt & pepper
  • 1 diced white onion
  • 1 cup of diced mixed bell pepper
  • 1 diced and deseeded jalapeno (feel free to omit if you don’t like spice!)

Recipe: Cooked Sweet Potatoes

We’re counting down the hours at this point until we can toss aside our cares and embrace delicious holiday foods. This recipe for maple roasted sweet potatoes is a hit any time of the year, but it’s an especially pleasing side for your Thanksgiving feast.

What You’ll Need:

  • 4 large sweet potatoes (we use 2 white and 2 regular to mix up the color)
  • 2 Honeycrisp apples
  • 3 tablespoons of olive oil
  • 1/4 cup of maple syrup
  • 1 teaspoon of nutmeg
